yummm! i have a potluck to go to this evening and brownies are one of my favorite things to make. this time i thought i'd jazz up my favorite recipe a bit with a little spicy hot chocolate and a spicy chocolate bar. i'm pretty happy with the way they turned out, although next time i might add a little cayenne pepper into the mix, just to get a little bite at the end.
here's the recipe if you're interested:
3/4 cup butter melted
1 1/2 cup sugar
1 1/2 teaspoon vanilla
3 eggs
3/4 cup flour
1/4 cup cocoa
1/4 cup mexican hot chocolate (powder)
1/2 teaspoon baking powder
1/2 teaspoon salt
* 1 spicy chocolate bar, cut into chunks(optional)
* 1/4 teaspoon cayenne pepper (optional)
1. heat oven to 350°
2. place mini cupcake tins into pan, or grease 8x8x2 pan.
3. in medium bowl, blend melted butter, sugar and vanilla.
4. add eggs, beat well.
5. in separate bowl, combine flour, cocoa, mexican hot chocolate, baking powder and salt.
6. gradually add flour mixture to egg mixture, stir until well blended.
7. stir in half the chopped chocolate bar
8. for cupcakes, bake 10-12 minutes. for square pan brownies, bake 35-40 minutes.
9. Once the brownies come out of the oven, quickly poke the remaining chocolate chunks into the center of the brownies.
