I made a trip to one of my favorite stores in Brooklyn, Sahadi's last week and stocked up on all sorts of bulk ingredients. One of my favorite finds was this amazing cocoa powder that's dark and rich and really puts the canned cocoa powder I've been using to shame. With over a pound sitting on the counter, I couldn't resist the urge to make something with it, so I looked through a few books until I found the perfect recipe, no bake cookies.
No bake cookies are one of my favorites sweet treast because they're so easy to make. It doesn't hurt that they not only have chocolate, but peanut butter as well. In less than a half hour my cocoa had been tranformed into a little cookie that really hit the spot.
No-Bake Cookies
makes about 2 dozen
2 cups sugar
1 teaspoon vanilla
1/4 cup cocoa
pinch of salt
1/2 cup milk
1/2 cup peanut butter
1/4 cup butter
3 cups oatmeal

Combine sugar, cocoa, milk and butter in a large saucepan over medium heat.

Cook until the mixture starts to boil and cook for 1 minute.

Add vanilla, salt, peanut butter and oatmeal and quickly stir until combined.

Drop teaspoons onto parchment paper and let cool.

Judy – I just used instant oatmeal, but whatever you have on hand will probably work just fine.
Maggie & Karen, The cocoa is bulk cocoa that didn’t have a name on it, but it’s luxuriously dark (and only $3.50/lb!!)
I started making these in college and I think they’re a perfect college cookie, easy to make, easier to eat.

it also works well if you just dump the mix onto a cake pan if you don’t have the time or the parchment paper.

I love no bake cookies. They are the easiest thing to bring to an office party. I sometimes make them with soy nut butter for those that can’t eat peanuts.

This is one OLD recipe! My grandmother used to make these in the Great Depression. As a child I remember going to her house and she either had these “Skillet Cookies” or the peanut butter/Corn Syrup/Corn Flakes cookies.
I find these cook up best with a nice cast iron skillet and removing the skillet from the burner to stop the cooking process.

Have enjoyed these for many years. Use the one minute oats, but the old fashioned will work in a pinch…just a little different texture. One of the best.

I swear, these are the easiest and tastiest cookies to make, like, omigod, EVAR. I bring them to work and my co-workers are literally agog at how awesome they are and how hard I worked… at first I tried to explain, “no, this is the easiest thing in the world, seriously”, but now I just bask in the glory.

I have made these but I throw in a cup of coconut and skip the peanut butter. They are hazardous because I always burn my mouth, so I put mine in the freezer to cool. I also drop them into buttered muffin tins or use muffin papers to keep them from sticking to your fingers. YUM

Ah, the classic no bake recipe. This was one of the first things I made when I was a kid. I would make it twice a week at least.

Delicious! When I first used this recipe I found they were a little too gooey to be practical, and took hours to dry, but boiling them about 20 seconds longer firms them right up. Thank you so much!

love this classic recipe. I can’t wait to try it with coconut, but I would like to suggest you don’t really need parchment paper as these are “no bake” cookies. If you’ve got it in your cupboard fine, but in my experience you could use any old surface that is clean and won’t impart it’s flavor into your cookies. A baking sheet, a strip of aluminium foil, a counter top, your clean linolium floor – all will do fine.

When my son was in the Navy (1991) this is one of many things I could make and send to him. He and his shiipmates really liked
them. That Quakers is in these makes them just that much better.
This is ALWAYS one you have to have the recipie on hand for
friends when you serve them.
You’ll never be able to make enough of them….they go so fast!
