leftover pie

One of the great things about Thanksgiving is the leftovers. The only thing is, I don't necessarily want turkey and mashed potatoes over and over again. So I set out to create a super delicious meal that takes care of most of the leftovers in one shot and is something totally different. That's how I created leftover pie, my own little take on shepherd's pie. It's super delicious and only requires a few new ingredients. It's basically a mash up of turkey, stuffing, a veggie (I used edamame), and an onion all topped off with leftover mashed potatoes. Give it some time in the oven and you've got yourself a simple and tasty meal that everyone will love. leftover pie 1 onion, chopped 2 cups leftover turkey 1 teaspoon vegetable oil 1 cup turkey or chicken stock 1 cup leftover stuffing 1/2 cup peas or edamame 2 cups mashed potatoes
Preheat oven to 350°
1 Heat oil in pan over medium high heat. Add onions and turkey, cook until onions become translucent. 2 Add stuffing, peas and stock until stock thickens slightly. 3 Pour mixture into loaf pan so it fills about 2/3 of the pan. 4 Add mashed potatoes over top and cover with foil. Cook for 20 minutes. 5 Take foil off and cook for another 10 minutes. 6 Eat up!

    I love leftover pie. It’s such a classic way to clean out the fridge after Thanksgiving. I also always seem to come up with some great soup recipes after the blessed day of eating.
