I am so addicted to this salad. I’ve tried different variations that use apples instead of pears or pecans instead of pistachios and they’re all good… all awesome actually. But my favorite combo is freshly cut pear, some creamy gorgonzola and a few pistachios sprinkled about. Deeelicoius. Plus, it takes all of five minutes, tops.
Simply lay slices of pear over a bed of arugula, sprinkle some nice creamy gorgonzola, a handful of pistachios over top and drizzle a little balsamic over top. Then try to contain yourself. The greens and pear bring a liveliness that I need in February while the creamy, tangy gorgonzola bring an indulgence that I love any time of year. Yeah, it’s the perfect winter salad.

baby arugula
pistachios
creamy gorgonzola
pear, sliced
balsamic

Lay a bed of arugula on a plate, top with pear slices and chunks of gorgonzola. Sprinkle pistachios over the salad and dress with a drizzle of balsamic.

This is so yum! I just recently had a salad like this where they grilled the pear. It was also good but it loses some of the crispness of the salad. And who doesn’t like a salad that takes 5 mins?

This looks amazing. As soon as I’m not pregnant anymore (I’m due in 2 1/2 weeks) and can eat soft cheese, I am making this. Yum! (PS Your pictures are so lovely. They make me smile.)

I have pears at home, I am sooo making this tomorrow. Too bad I need every other ingredient except for pears and lettuce.

Such a wonderful and simple salad! I so want to bit into that plate of yours. I love gorgonzola. I can only imagine how wonderful it would be with the pears.

Ours, too. Pink ladies and blue cheese are pretty fine, and if we happen to have some candied pecans in the house, I’m happy to call it dinner.
