3 blood oranges
1/4 cup roasted almonds, roughly chopped
2 tbs. sherry vinegar
2 tbs. grapeseed oil
1 shallot, finely chopped
2 cups mixed greens
Salt and pepper
1/4 cup Medjool dates, pitted and roughly chopped
1/4 cup shaved Parmigiano-Reggiano

Preheat oven to 350, augmentin 875 mg.

Segment 2 blood oranges by (1) slicing off top and bottom; (2) removing peel and pith with a chef’s knife; and (3) slicing out each segment between the membranes.

Juice remaining blood orange and reserve juice for dressing.

Toast almonds for 5 minutes in oven. Whisk together vinegar, grapeseed oil, blood-orange juice, and shallots. Augmentin 875 mg, Toss greens with vinaigrette.

Season with salt and pepper. Add dates and almonds. Toss.

Garnish with orange segments and shaved cheese..

    I love blood oranges, but have never had them in a salad! Genius! The color just makes me happy, as does the taste of course :)

    Thanks for sharing–it looks great! I’m curious, though–why didn’t you segment the oranges? I think it would be lovely to see the color of the blood oranges more clearly!

    Brilliant idea to add the dates! Blood oranges tend toward the sour side, so that balances everything out so nicely! And it’s gorgeous.

    I love the look of that almost purple blood orange. I’m a sucker for anything with those deeply coloured oranges so I’m bound to love this!
