happy hour: subtle summer

Wooohooo! It’s a long weekend! We’re planning on chilling out, exploring and making a few cocktails… if you ask me, it sounds pretty dreamy.

This week’s cocktail is a light and refreshing summer beverage. I’m not a huge cucumber fan, but there’s something about the combination of cucumber and sake that just tastes awesomely refreshing. While I haven’t tried making a whole pitcher, I’d imagine it would be great in a pitcher served by the pool on a warm summer day.

Subtle Summer
makes 1 cocktail

2 oz sake
1/2 oz fresh lemon juice
1/2 oz simple syrup
2 slices cucumber, plus more for garnish

Place all ingredients in a cocktail shaker along with two ice cubes. Shake vigorously for 15 seconds.

Strain into a lowball glass and garnish with thinly sliced cucumbers. Cheers!

    Oooh! I love cucumber so I will definitely try this. I also read a recommendation by Katie Lee (as in Billy Joel’s ex-wife) for drinking sake. She cores apples almost all the way through and pours a serving of sake inside the apple itself. After the drink, you can get a refill or munch on a sake-soaked Granny Smith!

    Interesting – I’m not a big cucumber fan either, and I’ve had some cucumber vodka that I didn’t like at all. I’ll give it a try with sake though!
