Have you ever had a pomelo? They’re crazy! And by crazy, I mean big. In fact, they’re the biggest citrus fruit out there. They taste similar to a grapefruit, but with a sweeter, more subtle flavor. Obviously I had to make a cocktail with one. I went with something simple that would show off the flavor, hence the fizz. Bonus points, the juice of one pomelo is enough for 4 cocktails.
1/4 pomelo next to a lemon

pomelo fizz
makes 1 cocktail
1 oz pomelo juice
1.5 oz gin, like Breuckelen Gin
.5 oz simple syrup
1-2 oz soda water

In a shaker filled with ice, combine the pomelo juice, gin and simple syrup. Shake well.

Strain into glass and top off with soda water. Enjoy!

So funny Kelly, I just bought pomelo juice at the farmers market this morning and was planning on getting some vodka to have with it! Gin actually sounds better, I bet Hendricks would be good with it’s herby/cucumbery goodness. I also bought a pint of blood orange juice. Oh California, I love you…

We came across pomelos in the grocers once, and I had to buy one. They were really interesting! I bet this would be a lovely cocktail.
